Beef Burger with Microgreens, Mint Aioli, & Feta
Ingredients:
Burger Patty:
- 1 lb (450g) ground beef (80/20 blend for juiciness)
- Salt and pepper to taste
- 1 tablespoon Worcestershire sauce
Mint Aioli:
- 1/2 cup mayonnaise
- 1 tablespoon fresh mint, finely chopped
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Toppings:
- 1/4 cup feta cheese, crumbled
- 1/2 cup mixed microgreens (such as radish, beet, and kale)
- 4 burger buns, toasted
- Optional: Sliced tomato and red onion
Instructions:
Prepare the Mint Aioli:
- In a small bowl, combine mayonnaise, chopped mint, minced garlic, and lemon juice. Season with salt and pepper to taste. Mix well and set aside in the fridge to let the flavors meld.
Make the Burger Patties:
- In a bowl, season the ground beef with salt, pepper, and Worcestershire sauce. Mix gently until just combined. Divide the mixture into four equal parts and form into patties.
- Preheat your grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side for medium doneness, or adjust according to your preference.
Assemble the Burgers:
- Spread a generous amount of mint aioli on the bottom half of each toasted bun.
- Place the cooked beef patty on top of the aioli.
- Sprinkle crumbled feta cheese over the beef patty.
- Add a healthy handful of mixed microgreens on top of the feta.
- If using, add sliced tomato and red onion.
- Cap with the top half of the bun.
